  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 55-60 minutes, or until the center is set and the top is lightly browned.
  6. Remove from the oven and let cool in the pan for 10 minutes.
  7. Remove the sides of the springform pan and let the cheesecake cool completely.
  8. Refrigerate for at least 2 hours, or overnight.
  9. Before serving, top the cheesecake with sliced strawberries and whipped cream. Sprinkle with powdered sugar.
