Ingredients
  • 200 gram Butter
  • 120 gram Granulated Sugar
  • 1 unit Egg
  • 1 teaspoon Vanilla Extract
  • 300 gram All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 cup Strawberry Marmalade
  • 2 tablespoon Powdered Sugar
Instructions
  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour and baking powder.
  4. Gradually add the dry ingredients to the butter mixture, mixing well after each addition.
  5. Divide the dough into two equal parts and shape each into a log, wrap with plastic wrap and refrigerate for 1 hour.
  6. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  7. Slice the chilled dough into 1/4 inch thick rounds and place them on the prepared baking sheet.
  8. Make a small indentation in the center of each cookie and fill with strawberry marmalade.
  9. Bake for 10-12 minutes, or until the edges are golden brown.
  10. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. Dust with powdered sugar before serving.
