Ingredients
  • 200 gram Carrot
  • 300 gram Cauliflower
  • 150 gram Celery
  • 100 gram Cheese
  • 4 cup Vegetable broth
  • 1 piece Onion
  • 2 clove Garlic
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until fragrant.
  2. Add diced carrot, cauliflower florets, and celery. Stir and cook for 5 minutes.
  3. Pour vegetable broth into the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the vegetables are tender.
  4. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
  5. Return the soup to the pot and heat over low heat. Stir in grated cheese until melted and well combined.
  6. Season with salt and black pepper to taste.
  7. Serve hot and enjoy!
