Petticoat Tails
Petticoat Tails are a traditional Scottish shortbread biscuit that gets its name from its resemblance to the shape of a petticoat worn under a skirt.

Preheat the oven to 160°C (320°F).

In a mixing bowl, cream together the butter and caster sugar until light and fluffy.

Sift in the plain flour and cornstarch, then mix until the dough comes together.

Roll out the dough on a lightly floured surface to a thickness of about 1/4 inch.

Use a cookie cutter to cut out petticoat tail shapes and place them on a baking tray lined with parchment paper.

Bake in the preheated oven for 18-20 minutes, or until the edges are lightly golden.

Remove from the oven and let them cool on a wire rack for about 30 minutes.
