Peach Mousse Cake
Peaches are native to China and have been cultivated for thousands of years.

Puree the peaches in a blender.

Dissolve gelatin in hot water and let it cool.

In a separate bowl, whip the cream with sugar and vanilla extract until stiff peaks form.

Gently fold the peach puree into the whipped cream.

Line the bottom of a springform pan with sponge cake slices.

Spread a layer of peach mousse on top of the sponge cake.

Repeat the layers until all the mousse and cake are used, ending with a layer of mousse.

Refrigerate for at least 2 hours.

Before serving, spread peach jam on top and garnish with fresh mint leaves.
