Heat olive oil in a large pot over medium heat.

Add chopped onion and minced garlic. Sauté until onions are soft and translucent.

Add broccoli florets and vegetable stock. Bring to a boil and simmer until broccoli is tender.

Use a blender or an immersion blender to puree the soup until smooth.

Return the soup to the pot and stir in heavy cream. Season with salt and black pepper to taste.
